A new spin on tex mex night - soy curl fajitas! These is a great option if you are looking to reduce your meat consumption and increase plant based meals in your week. The rehydrated soy curls will soak up the fajita seasoning and marry well with a colorful mix of peppers and onions. Serve it with your favorite toppings (pickled red onions, guacamole, salsa, sour cream) on warm tortillas. The best part? It's a sheet pan meal so clean up is a breeze! A perfect weeknight meal.

Filling Ingredients
 2 cups Soy Curls
 2 cups Hot Vegetable broth or water
 2 Bell Peppers, sliced
 1 White or yellow onion, sliced
 3 tbsp Fajita Spice Blend
Toppings
 Tortillas
 Salsa
 Avocado
 Sour cream
 Shredded Cheese
 Cilantro
 Fresh lime juice
 Pickled red onions

Preheat the oven to 425 Degress Fahrenheit

Place soy curls in a bowl and cover with the hot vegetable broth or water. Allow to soak for 10 minutes. Drain.

In the meantime, slice the peppers and onions and spread evenly onto a large non stick or parchment covered sheet pan.

Drain the soy curls and add them to the sheet pan with the peppers and onions. Top with olive oil and the fajita seasoning. Mix with your hands or tongs to thoroughly coat the peppers and soy curls.

Bake for 25 minutes, until peppers are starting to blacken and soy curls are chewy.

While this bakes, prepare your toppings. Warm up your tortillas (especially if using corn).
