The first time I made these chickpea energy bites, I wasn’t sure what to expect. Would the texture be right? Would they taste good? It turns out they are amazing, with an extra nutrition boost from chickpeas. These bites are packed with protein, fiber AND flavor, making them a perfect go to snack for busy days, post workout, kid’s lunches and more. They are both dietitian-and kid-approved (according to my 3 year old!)

How to Store Energy Bites

Store in an airtight container for up to a week in the fridge of 3 months in the freezer. If you have a vacuum sealer, you can meal prep a double batch. Then, freeze the bites on a cookie sheet before vacuum sealing. They will keep longer this way!

Ingredients
 1 540ml can chickpeas, drained and rinsed
 1 cup rolled oats
 0.67 cup natural smooth peanut butter (or sunflower butter for school-safe option)
 0.33 cup honey (or maple syrup)
 0.50 tsp cinnamon
 1.50 tsp vanilla extract
 0.25 cup chocolate chips (mini work better if you have them!)
Directions

For a smoother consistency, rub the skins off the chickpeas. This step is optional. The skins don't change it all that much!

Add all ingredients except chocolate chips to a food processor.

Blend until combined, stopping to scrape down as needed. You can add water 1 tbsp at a time if it's too thick

Move mixture to a bowl and mix in chocolate chips

Refrigerate for 10-15 minutes until it firms up slightly

Roll into tablespoon sized balls. Enjoy!
