Let’s be honest, mornings can be rough. Whether you’re getting wrangling a needy pet or just trying to locate your left shoe (why are they never together?), breakfast often takes a back seat. If you’re trying to avoid that 10 a.m. blood sugar crash that turns you into a snack-seeking missile, you might feel like your options are stuck between avocado toast and…another bowl of granola.

As a dietitian, I’m here to say: you deserve better. You deserve flavour. And you definitely deserve something that doesn’t spike your blood sugar and leave you hangry by mid-morning.

Here are some savoury, globally inspired blood sugar friendly breakfasts that come together quickly, help balance blood sugars, and might even make you feel like the adventurous, well-fed person you were always meant to be (and they just happen to be vegetarian too)!

Chickpea Pancake a.k.a. Besan Chilla from India

Basically a protein-packed crepe that says “I meal prep, but I still like to sleep in.”

Whisk chickpea flour with water, turmeric, cumin, and some chopped vegetables like spinach, tomatoes, or zucchini. Cook like a thin pancake. Fold. Devour.

Why it works: Chickpea flour is naturally high in protein and fiber, so you’re not hungry 30 minutes later, scanning the breakroom for cookies.

Pro tip: Make the batter the night before. 

Mediterranean Mezze Plate

When breakfast feels more like a snack plate and you’re here for it.

Think: boiled egg, hummus, olives, cherry tomatoes, cucumber, and a wedge of feta or herbed labneh (yogurt cheese). Add a slice of dense seed bread if you’re into that.

Why it works: It’s basically a grazing board with benefits: fiber, protein, and healthy fats all come together like a power breakfast committee. 

Pro tip: Great for on the go too! Pack it up the night before and you’ll thank yourself as you’re sitting in morning rush hour traffic. 

Turkish-Style Eggs with Garlic Yogurt and Chili Butter 

For when you want to feel fancy at 7:30 a.m. without actually trying.

Poach a couple of eggs and plop them onto garlicky Greek yogurt. Drizzle with warm chili butter and sprinkle with herbs. This dish is chef’s kiss.

Why it works: You’re getting a protein double-whammy from the eggs and yogurt, plus healthy fats to slow digestion and keep blood sugars chill. Also: joy.

Pro tip: You can poach the eggs the night before and then place them on a j-cloth in a container in the fridge. In the morning, boil some water then put the eggs into their little hot tub to warm up before building your bowl. Add some whole grain bread for dipping and you’ve got breakfast perfection. P.S. chili butter is just melted butter with red pepper flakes whisked in. 

Tofu Scramble with Kimchi and Toasted Sesame (with a Korean twist)

Because tofu deserves better PR.

Crumble tofu into a pan with turmeric, garlic, green onion, and a handful of spinach. Top with a spoonful of kimchi and a sprinkle of sesame seeds. If you have it, add some kala namak (black salt) for an eggy taste. 

Why it works: Tofu is a stellar source of vegetarian protein. It’s low-carb and soaks up flavour like a dream. Kimchi? Good for your gut and your taste buds. 

Pro tip: Did you buy the 8-pack of tofu at Costco and haven’t used it all yet? Freeze it! Once defrosted you’ll have a meatier texture. Just make sure you press it really well to get all the water out!
