Looking for a new cracker that is tasty and helps with satiety? Try making these red lentil crackers! These are super easy to make with a few household ingredients. They go great with cheese and cucumber slices or hummus (try it with the butternut squash hummus) for an enjoyable and filling snack. Recipe makes about 40 crackers.
Ingredients
  cup dry red lentils
 1 cup water
 ¾ cup flour
 2 tbsp olive oil
 23 tbsp water
 ½ tsp garlic powder
 ½ tsp cajun seasoning
 ¼ tsp black pepper
 ¼ tsp salt

Preheat oven to 450 degrees.

Boil lentils in 1 cup water until soft (10-15 minutes). Drain.

Combine lentils, flour, olive oil and seasonings.

Add enough water to bring the mixture together into a sticky dough

Roll out the dough between 2 sheets of parchment paper until it is fairly thin (1/8 inch). The thinner you roll the crackers, the crispier they will be. You can also use a pasta press here.

Cut into any shape you choose.

Bake in the oven for 10--15 minutes or until crispy and golden brown.
