From Kieran's family kitchen comes another amazing recipe. This one is perfect for family pizza night! Change up cheese and pepporini for this flavorful, must try BBQ chicken pizza!
Combine the chicken and 1 cup of the BBQ sauce. Marinate overnight. If you're short on time, marinate for at least 4 hours. Bring to room temperature before assembling.
Preheat the oven to 325F. Prepare your dough (see dough recipe here)
Place the chicken in an oven safe dish, cover with foil, and cook in the oven for 30 minutes at 325F. Option - grill the chicken on the BBQ
Once cooked through, let cool and slice in to bite sized pieces.
If using a pizza stone, place it in the oven and change the oven temperature to 400F.
Shape the dough into a pizza crust and brush with olive oil.
Top the dough with a thin layer of the mozzarella and gouda cheese (1/2 cup of each)
Spoon the remaining 2 cups of BBQ sauce over the pizza
Top with the rest of both cheeses, the chicken and onions.
Drizzle with olive oil
Transfer the pizza onto a cornmeal covered preheated pizza stone or baking sheet and cook at 375F until the crust is golden brown and the cheese is melted and bubbling.
Sprinkle with cilantro and oregano, slice, enjoy!
